Peach Scrap Syrup

Its late summer and the peaches are ripe. I adore peaches. I think they are one of the best fruits – all sweet and juicy and perfect for a variety of creations. Peach pie, peach cobbler, peach tea, peaches and bourbon spooned over ice cream…YUM! Of course after processing a bushel of peaches for the pantry we have a ton of scraps (skins with a bit of fruit clinging to them and lots of runny juice) left over. While the pits are saved for planting and the rotten parts go to the compost, the rest can be utilized for syrup and jelly. Peach Scrap Syrup is awesome! I knew I had to share.

DO NOT USE PEACH PITS in your peach scrap syrup. Peach pits contain cyanide. Long term use or large doses of peach pit syrup, tincture, or other concoctions can lead to serious illness or even death.

Peach Scrap Syrup Recipe

I have to apologize in advance. This isn’t much of a recipe. I don’t have exact measurements. It all depends on how many peach scraps you have. That being said, you should be able to brew up a batch of syrup with the directions provided.

You Will Need:

  • Peach scraps (skins mostly or discolored, too-soft pieces)
  • Sugar
  • Water
  • Saucepan or pot (depending on how much you are brewing at a time)
  • Measuring cup (I use a 4 cup Pyrex measuring cup)
  • Strainer
  • Large spoon
  • Mason jars or other containers for storing the syrup

If you plan to make a large batch of syrup to save over a long period of time, I recommend canning it in a hot bath after brewing it up.


Put your peach scraps in your saucepan or pot.
Cover with water.
Bring to a boil.
Simmer for 30 minutes, stirring regularly.
Remove from heat and strain the decoction off.
Measure the liquid (this part is very important).
Add the liquid back to the pot and add equal parts sugar.
Heat on medium (do not boil) and dissolve the sugar.
Stir on medium heat for 20 minutes.
Remove from heat and pour into storage jars.
From here you can store your syrup in the fridge or can it in a hot water bath for long term storage.

I use peach scrap syrup in a variety of ways but most in drinks. My favorite is Peachy Tea – brew up some iced tea, add peach scrap syrup to taste, and enjoy over ice. If you like, add a splash of real cream to your iced tea for a peaches and cream flavor, YUM!
